Raspberry Almond Dairy-Free Overnight Oats
First off, I have to tell you that pink overnight oats in a little mason jar is just the cutest thing to wake up to in the morning! Add to that the fact that they’re delicious and you’re all set for a great day.

Maple Pecan Overnight Oatmeal
Go Dairy Free is the website of the crazy popular book of the same name, so you know this is going to be good! First of all, the first step of the recipe is to make maple pecans! That’s all I needed to hear and I jumped into the kitchen.
These oats have a strong maple flavor and are so easy to put together. I prefer them heated up on cold mornings, but they can be eaten directly out of the fridge as well.

Vegan Overnight Oats Rhubarb Compote
Lauren’s done it again with another dish that’s ridiculously delicious and easy at the same time!
Her recipe is full of fruits and nuts, but the shining star is definitely the rhubarb compote at the bottom of the jar of oats that gives this breakfast dish its name. Think of it like a fruit on the bottom yogurt cup; every stir brings up more sweet goodness!

I think that my favorite part of this recipe is that now I can have gingerbread all year long!

I want to personally thank Mary Ellen for making over my morning routine with this recipe! A super simple, homemade blueberry jam pairs with lemon juice and a to die for cashew cream to create these decadent dairy-free overnight oats. It’s not a flavor combination that I had tried before with my daily oats, but now I will never go back; the flavors are just amazing.
