I’ve never been able to look at funfetti cake without my taste buds going wild with desire. So when I saw that Brandi from The Vegan 8 had developed a funfetti cake recipe that was vegan and gluten-free, I just about cried!
Like all her recipes, this one keeps it simple: the cake uses only eight ingredients (if you don’t count salt) and the frosting uses just six. Brandi also includes instructions for baking cupcakes instead of layer cake.
