After making these crazy-good cheesecake bars, I made sure to explore her blog even further. Spend enough time with Denisse, and you’ll be cooking like a pro in no time. She makes things so effortless.

In this recipe, tiny nuggets of vegan cookie dough nestle within a protein-packed cream filling, and a toothsome crust of pecans and maple syrup provide a pastry shell with magnitudes of rich flavor.

Breaking from cheesecake tradition, the exquisite cream is snuggled into individual chocolate candy cups instead of atop a biscuit base. Eating these was like a mouthful of heaven, and I’m not ashamed to say I ate more of these than I shared.

Classic and always sought after, the New York cheesecake recipe created by A Virtual Vegan’s host, Mel, brought the perfect East-Coast bite into my kitchen.

A biscuit-based crumb crust supports the sturdy cream filling that uses a couple of surprise ingredient to achieve the right texture – tahini paste and garbanzo beans. These components do a great job of producing the thick, firm and creamy composition that I expect from a true New York style cheesecake.

Plenty of fresh lemon gives the filling vibrant and bright citrus flavor and aroma, while a small amount of vibrant yellow turmeric provides a cheerful hue that made me eat with my eyes before I even tasted the first bite.
