To make a nut based cream cheese alternative, for example with cashews or almonds, pour boiling water over your nuts and let them soak for 20 minutes or so.
Drain the nuts and put them into a blender. Blitz, and slowly add the non-dairy milk of your choice, until you achieve the desired consistency.
Now comes the fun part: the flavorings.
For sweet cream cheese, try adding fruit or fruit juice. For savory cream cheese, you can experiment with spices, herbs, nutritional yeast, or different vegetables.
For a nut free cream cheese, try silken or firm tofu. Blitz it in a food processor until it’s silky smooth. If you want an extra tang, add a bit of apple cider vinegar or lemon juice.
