What is a mandoline?

For those who don’t know what a mandoline is, it isn’t a type of ancient string instrument (don’t confuse it with a mandolin!). But, as you might have guessed, this cutting utensil is related to the string instrument. (1)

How? Well, the wrist movement used to play the mandolin is the exact same movement you use to move the vegetable against the mandoline blade, which is where it got its name! (2)

It works by using sharp, built-in blades that you run the vegetable of choice over. This slices the vegetable based on an adjustable width and thickness setting. You can watch this video if you want a visual of how it works:

Why do you need a mandoline?

You might think you’re better off using a knife to slice your vegetables. And if you’re only cutting vegetables once in a while, then perhaps you don’t really need a mandoline slicer.

However, a mandoline can be better for a few different reasons:

Speed

Slicing by hand can take a long time, especially if you don’t have the best knife skills or you only cook and prep vegetables once in a while. Mandolines can help you get through a towering pile of potatoes in minutes vs the typical hours of knife work required when confronted with a large job.

As a vegan or someone eating a plant-based diet, you’ll find yourself needing to prep and eat many more vegetables. Why not speed up the process of making your favorite veggie sandwich, prepping potatoes for french fries, or slicing vegetables for a vegan dinner party?

Uniformity

Not only will a mandoline speed up your process, it will also probably do it better than you ever could. (Sorry about that!)

Safety concerns

It’s true that mandolines require less skill than slicing by knife, but you do need to have your wits about you to use a dangerous tool such as this.

Yes, these utensils are easy to use and great for slicing vegetables quickly and easily, but, if your fingers slips, it will just as easily slice your skin as it will a tough root vegetable. (3)

Therefore, many mandolines slicers come with safety features and grips that will make them safer and easier to use, which is definitely something to look out for when you’re considering which mandoline slicer is best to buy.

You can also try a pair of safety gloves if all else fails. It’s the way I use my mandoline slicer these days and I’d never go back.

Different blade options

Mandoline cutters usually have three different blade design options: straight blades, V-shaped blades, and diagonal blade.

Straight blades are on classic French-style mandolines. These are strong utensils, making them great for tougher vegetables like potatoes, beets, carrots, and other root vegetables. However, they do require a lot of force as you push down, which means that softer, more delicate items like fruit and tomatoes can be crushed.

Another issue with the force required of straight blades is that it’s much easier to hurt yourself. You can slip, push too hard, etc and end up cutting your hand in the process…which isn’t ideal!

V-shaped blades are perhaps the most popular blade design for their versatility. These blades work on all textured fruits and vegetables: potatoes and peaches alike. 

Diagonal blades are most often seen on traditional Japanese-style mandolines. The diagonal blade is great for softer and more tender vegetables and fruits, as they won’t be crushed or ruined during slicing. They can handle tougher vegetables well, too.

The diagonal blade also requires you to use less force, which means you’re less likely to hurt yourself by accident.

Handheld vs stand

Stand mandolines do exactly what you’d think: they stand on their own. Many people prefer stand models to handheld since they feel more secure and stable, which makes them safer.

Handheld mandonlines are, well, handheld. You’ll hold onto a handle and rest the bottom of the slicer against the surface where you’re working. While some may think this feels a little unstable, others like the feeling of having more control over the exact angle at which they slice.

Adjustable Mandoline Slicer by HomeNative

This adjustable mandoline slicer by HomeNative puts its biggest advantage right in the title: adjustable.

Not only is this utensil adjustable in terms of size and width of the slices (with 3 thickness settings at 1mm, 3mm, and 5mm), but it also comes with various adjustable blade options, too.

Out of the box, you’ll get 5 different blades, which will give you many options in the kitchen: vegetable cutter, peeler, slicer, grater, fine grater, spiralizer, and julienne slicer all in one little mandoline.

This is also a great option in terms of safety. The slicing mechanism has a “safety hat” attached to the top, which makes it very difficult to injure yourself. The grip is also soft and makes it easy to hold safely and securely.

We also love the container attachment feature. The tool itself can attach to a “holding” container, which means your sliced, grated, and cut vegetables will fall right into the tub instead of all over your kitchen counter. The bottom also has a strong grip so you don’t have to worry about the device sliding around dangerously.

One complaint that many owners had is about the strength of this utensil. They say that it doesn’t hold up to larger and tougher vegetables like squash or eggplant. While it’s not impossible to slice or grate these veggies with this mandoline, it’s not easy and isn’t even recommended in the product description.

Another common complaint is that it’s hard to figure out initially. Some say the directions are confusing, and others say that it’s hard to switch blades and attach it to the container. However, many say that once they do some trial and error, it gets easier to use.

Besides that, this is a well-loved kitchen tool. It’s dishwasher safe and one of the safer options available.

Premium Stainless Steel Mandoline Slicer by Grocery Art

This Grocery Art slicer is called “premium” for a reason: the diagonal stainless steel blades are tough, durable, and some of the strongest available for a home mandoline slicer.

It’s a stand tool that has an added handle, making it stable and safe. The stainless steel is easy to clean (it’s also dishwasher safe!), never needs sharpening, and will never bend or break.

The stronger blades means that this can get through even the toughest root vegetables. Some owners find that this cutting tool isn’t great for slicing softer and more delicate ingredients, though.

If you thought that the first mandoline I went over was versatile, you’ll be blown away by the options you have on this guy. You can get flat slices ranging from 1 to 9 mm in thickness, along with 4.5 to 9 mm julienne slices.

However, this one doesn’t come with adjustable blades. The cutting edges on this model are built-in, which might not be ideal for some. But the built-in nature of this tool means the blades can be made thicker and stronger than other adjustable mandoline options.

Some stand mandolines are seen as not as safe, but the added handle on this model makes it easier to stabilize and control. The utensil also comes with a safety blade guard and cut resistant safety gloves, which should really be used with all tools of this type, regardless which one you end up buying.

All in all, this is a very good mandoline indeed and, thanks to its build quality, one that should stand the test of time…even for those who intend to regularly cut the tougher veggies out there.

Vegetable Chopper Mandoline Slicer Dicer by Fullstar

Like the HomeNative option I went over earlier, this Fullstar device is best known for its versatility. It comes with 7 interchangeable blades so you can make the most of your mandoline.

The blades included are: small dice blade for soft ingredients, large dice blade, spiralizer, ribbon blade, straight cut diagonal blade, grater blade, julienne slicer.

Unlike other options I’m going over, this is the only one that has a dicing/chopping feature, which we love. You can easily chop up soft fruits and vegetables like pears and tomatoes, along with tougher veggies like carrots and onions, into cubes with this handy tool.

Owners find this mandoline a great replacement for many kitchen gadgets all in one small, compact item. They also find it to be extremely consistent in the cuts and dices it makes.

This utensil also comes with a container attachment similar to the HomeNative option so your ingredients will easily and conveniently be collected as you slice and dice. It’s dishwasher safe, easy to use, and the blades are durable stainless steel.

One of the downsides that’s a significant issue for many people is safety. The sharp blades and the set-up of the device make it prone to slips and serious injuries and cuts. You should definitely wear safety gloves at all times when using this mandoline, but unlike the Grocery Art option I just went over, this one doesn’t come with any included, so you’ll be obliged to buy your own, unfortunately.

Another complaint some owners have is that they have trouble with the really tough vegetables and have to use extra force to cut, dice, and slice. Striking a balance between safety and sharpness is never easy, and this tool falls just short.

OXO Good Grips V-Blade Mandoline Slicer

The OXO mandoline slicer is a stand, V-blade slicer that is excellent for beginner mandoline users.

The stand of this device gives it stability while the handle on the end gives you added control similar to the Grocery Art option, both of which help newcomers to mandolines use it safely.

It’s also a great option for beginners because of the other safety features included, which are some of the best on this list. It comes with a “safety hat”, lockable mechanism, non-slip stand, and a textured “runway” to keep your ingredients (and your hands!) from slipping.

Not only that, the aforementioned top handle is coated with OXO’s brilliant easy grip material, which makes holding onto the bad boy a breeze, even with wet hands.

It’s also fully adjustable: 4 blade options each with 4 different thicknesses help you slice, grate, and cut everything you need. The V-shaped blades are durable enough to cut through tough vegetables and sharp enough to handle delicate ingredients as well.

We love the “crinkle” and “straight” cut blades, as they really customize your vegetables in a way that other options on the market can’t. Another thing we adore is the locking feature and the foldable stand, which makes it easy to store even in the smallest kitchens (hello, fellow apartment dwellers ??).

The easy grip knob makes adjustments simple, and many customers find this is one of the most user-friendly mandolines they’ve used. Both beginners and experienced chefs alike love this option.

This tool isn’t without issues, though: some find it’s easily stained by vegetables like beets and carrots, which isn’t surprising, but still a little bit annoying. Others say that they’re disappointed it doesn’t come with safety gloves or blade storage. Also, the blades aren’t dishwasher safe, but the other parts of the machine are.

On balance, this is still one of the best mandolines available, but it’s not faultless, unfortunately.

PL8 by Progressive International Mandoline Slicer

The Progressive International Slicer is a stand mandoline that’s of professional quality. Unlike the other stand mandolines on this list, though, it doesn’t come with an additional handle, which some find too unstable. 

I guess the pros are well seasoned in their usage of tools such as this, so an additional handle is deemed unnecessary, but its inclusion would definitely make it a safer utensil, in my opinion.

All that being said, the device itself is stable and secure if you feel comfortable without a handle. The adjustable thicknesses are easy to figure out with simple knobs and dials on the side of the device.

The blades are seriously tough: thick stainless steel blades that are up to professional standards make any slicing a breeze. You can make 1 mm slices all the way up to 7.5 mm slices. We also love the waffle cut option.

It comes with a built-in hand guard for safety and a smooth runway for no snags or slippage. The feet of the stand are non-slip for added safety and grip, and they fold in for easy compact storage. The entire device is dishwasher safe, too, which is a great bonus.

One common complaint is that tougher veggies need a lot of force to get them to cut. This is not only frustrating for certain users, but it can also post a potential safety hazard if one isn’t careful when using this utensil.

My favorite, though, has got to be the Premium Stainless Steel Mandoline Slicer by Grocery Art. What really got me on this one was the amount of slicing options and the safety features. It’s the only tool to come with safety gloves, for example, which are essential when using a utensil like this.

It’s also dishwasher safe, easy to use, and one of the toughest slicers out there: you’ll easily slice through potatoes like butter. And while not everyone loves stand mandolines, the added grip handle makes it great for those who prefer handheld options as well.
